Keeping it cool
The method is based on a drum rotating in a water bath, which has a surface temperature of about -20 ° C. At a point outside of the water bath, the ice layer, which is formed by the rotation of the drum, is formed, scraped off. The flake ice can either be processed immediately or stored in a suitable container.
